kitchen assistant

Kitchen assistants are responsible for cleaning the kitchen, carrying out basic food preparation tasks, and making sure chefs have everything they need. They may also unload deliveries from suppliers and organise the storeroom.

Assistants work to keep the kitchen clean and follow strict hygiene, health and safety rules. This involves cleaning equipment, kitchen appliances, work surfaces, floors and walls. Kitchen assistants are often responsible for washing up.

Kitchens are quite often divided into sections, for example, there may be an area dedicated to the preparation of vegetables, another section for the preparation of meat, and another for raw fish. Many assistants will be responsible for working in a single area.

Assistants will use a variety of kitchen equipment such as automatic mixers, chipping machines and specially designed knives and cutters.

Hours and Environment

Hours of work vary and may include evenings, weekends and public holidays. Work in a factory or business is likely to have more regular hours. Part-time, casual or seasonal work may be available.

Kitchen assistants spend most of their time on their feet in the kitchen, which is often hot, steamy and noisy. The job can involve heavy lifting.

Protective clothing will usually be provided by the employer.

Skills and Interests

To be a kitchen assistant, you should:

  • have stamina and enthusiasm
  • be flexible
  • be able to carry out set tasks quickly and efficiently
  • have good communication skills
  • be able to work as part of a team.

Entry

You do not need any particular qualifications to work as a kitchen assistant, but a good general secondary education is useful. Some employers may prefer you to have GCSEs (A-E)/S grades (1-5).

Previous experience of working in a kitchen would be helpful.

By law, people under 18 are not allowed to handle some equipment, such as meat slicers. Those with certain skin conditions may also be restricted from being kitchen assistants.

Training

As a kitchen assistant, you will usually receive on-the-job training from an experienced member of staff. This can be combined with attending college to learn about hygiene, health and safety, and food preparation techniques.

It is possible to work towards qualifications such as NVQ/SVQ Level 1 in Hospitality (Food Preparation and Cooking) and Level 2 in Food Processing and Cooking. There are certificates in food studies, and hospitality and catering which may also be useful for an assistant.

Apprenticeships may be available for those under the age of 24. In England these are currently Apprenticeships (level 2) and Advanced Apprenticeships (level 3). To find out more about these, visit www.apprenticeships.org.uk

Opportunities

There are usually plenty of vacancies for this type of work.

With experience and further training, it may be possible to work towards becoming a chef. On completion of NVQ/SVQ Level 2 in Food Processing and Cooking, or Professional Cookery (or with equivalent experience), promotion may be possible to trainee or commis chef.

It may be necessary to change employer for progression.

Annual Income

Figures are intended as a guideline only.

The rate of pay ranges from the minimum hourly rate to up to £7.50 an hour.
Annual income ranges from £7,300 to £16,000.
