kitchen porter
Kitchen porters work in the kitchens of hotels, restaurants and other places where food is prepared and cooked for the public. They work in a team with chefs and cooks.
Kitchen porters keep the kitchen clean, tidy, safe and hygienic. Their duties are likely to include:
- sweeping and mopping floors during service, and at the end of a shift
- washing used cutlery, pots, pans and dishes
- loading and unloading a dishwasher
- putting clean items away
- collecting waste and disposing of it correctly.
Kitchen porters may also help unload deliveries of food and other equipment to the kitchen. They may help prepare food before the start of service.
Hours and Environment
Porters usually work 40 hours a week including weekends and public holidays. Shift work is common.
Kitchen porters spend most of their time on their feet in kitchens, which are usually hot and steamy. They may have to lift large, heavy utensils.
Protective clothing is usually provided by the employer.
Skills and Interests
As a kitchen porter, you should:
- be strong and physically fit
- be a good team-player
- have the ability to remain calm under pressure
- have an awareness of hygiene and safety regulations.
Entry
You do not need any particular qualifications to work as a kitchen porter, but a good general secondary education is useful.
Some employers might prefer you to have some GCSEs (A-E)/S grades (1-5).
Training
As a kitchen porter you may be encouraged to do a course in food safety, food hygiene, or health and safety. A number of professional bodies accredit such qualifications including the Chartered Institute of Environmental Health (CIEH), Royal Institute of Public Health (RIPH), and the Royal Society for the Promotion of Health (RSPH).
Some kitchen porters do an NVQ/SVQ Level 1 in Hospitality. This qualification will give you recognition for the work you do as a porter and it will also help if you decide to progress within the field of catering.
With further experience and on-the-job training you may be able to work towards becoming a chef. Appropriate qualifications for trainee chefs include NVQ/SVQ Level 2 in Food Processing and Cooking, and NVQ/SVQ levels 2 and 3 in Professional Cookery. Check the Chef job profile for details.
Apprenticeships may be available for those under the age of 24. In England these are currently Apprenticeships (level 2) and Advanced Apprenticeships (level 3). To find out more about these, visit www.apprenticeships.org.uk

Opportunities
Kitchen porters work in large kitchens in many organisations including hotels, restaurants, colleges and large office blocks. They can work in most parts of the UK and overseas, particularly in large cities and in tourist areas.
As well as full-time work, kitchen porters may find part-time, temporary, and seasonal employment.
With experience and further training, it is possible for kitchen porters to progress to becoming chefs or quick service cooks or to other jobs in catering such as serving food and drink, and housekeeping.
Annual Income
Figures are intended as a guideline only. Salary rates for porters will vary according to the type of establishment and its location.
A porter can earn between £9,000 to £16,000 a year.
Overtime and payments for working unsocial hours may increase earnings.
